Open Faced Avocado and Poached Egg Breakfast Sandwich

Hungry for a breakfast sandwich? This is the perfect healthier alternative. Filled with protein and healthy fats, it will satisfy your morning hunger and keep you full for your morning activities!



First, you'll start off by poaching an egg. While the egg is cooking, put your slice of bread in the toaster. I'm using a slice of light rye bread but you can evidently use any type of bread. Next, slice up a quarter of a small avocado and a few slices of tomato. 


Once ready, spread the avocado onto the toast. Top with tomato slices and add salt and pepper to taste. Add poached egg on top and drizzle with balsamic vinegar. There you have it! A delicious and nutritious breakfast!





Open Faced Avocado and Poached Egg Breakfast Sandwich
Makes 1 serving

Ingredients:

1 Egg
1 Slice of light rye bread (or any bread of your choice)
1/4 Small avocado
2 Tomato slices
Balsamic vinegar
Salt and pepper to taste

Instructions:

1. Poach an egg. If you don't know how to do this already, here's a link with instructions. 
2. Toast bread. 
4. Spread avocado on toast. Top with tomato, salt and pepper.  
5. Add poached egg to toast. Sprinkle with balsamic vinegar. 

Makes one serving. Serving is approximately 200 calories.
