Healthy Peanut Butter & Jelly Waffles

If you are a fan of PB&J sandwiches, this is the dish to try! These peanut butter and oat waffles topped with fresh berry puree are sure to satisfy and give you lots of energy to take on the day ahead. 



Start by blending together half a cup of large flake oats, a tablespoon of natural peanut butter, two tablespoons of unsweetened vanilla almond milk, a quarter cup of egg whites and half a teaspoon of baking powder.


 Blend well until the mixture is smooth. 


Once your waffle maker is heated, spray with cooking spray and add mixture in the centre of two waffle pans. Close and cook for 3-5 minutes. 

While waffles are cooking, combine half a cup of mixed fresh berries (strawberries, blueberries and raspberries) and a half teaspoon of flax seeds in a blender. Blend until smooth.

Once waffles are done, transfer to a plate, top with berry puree and serve!

Makes 1 serving

Ingredients:

1/2 cup Large flake oats
1 tbsp Natural peanut butter
2 tbsp Unsweetened vanilla almond milk
1/4 cup Egg whites
1/2 tsp Baking powder
1/2 cup Mixed berries
1/2 tsp Flax seeds


Instructions:

  1. In a blender, combine oats, peanut butter, almond milk, egg whites and baking powder. Blend until smooth.
  2. Once waffle maker is heated, spray with cooking spray and add mixture in the centre of two waffle pans. Close and cook for 3-5 minutes. 
  3. Blend together berries and flax seeds. Set aside.
  4. Remove waffles from the waffle maker and top with berry puree.
Makes 1 serving. Serving is approximately 325 calories.
