Tuna Avocado Salad Sandwich

It's no secret, I love avocados! This next recipe is a perfect example of this: Tuna Avocado Salad Sandwich. I switched out my regular mayo for avocado to create this delicious sandwich! 



Super easy to make: In a bowl, mix together one can of drained, flaked tuna, one medium avocado, one tablespoon of chopped green onions, one teaspoon of fresh lemon juice, half a teaspoon of dried parsley, four sliced cherry tomatoes, sea salt and ground pepper to taste.


Toast four slices of whole wheat bread. Spread mixture onto two of the slices, top off with the remaining slices and serve! 


Tuna Avocado Salad Sandwich 
Makes 2 servings

Ingredients:

1 Can flaked tuna, drained
1/2 Medium avocado
1 tbsp Green onions, sliced
1 tsp Lemon juice
1/2 tsp Dried parsley
4 Cherry tomatoes, sliced
Sea salt and freshly ground pepper to taste
4 Slices whole wheat bread

Instructions:
  1. In a bowl, combine tuna, avocado, green onions, lemon juice, parsley, cherry tomatoes, sea salt and pepper. Mix until well combined.
  2. Toast bread and put mixture on 2 of the toast. Top of with a slice of toast and serve. 
Makes 2 servings. Each serving is approximately 285 calories.
