Sweet & Salty Chewy Nut Bars

Have you ever tried a Lärabar? They're bars made with dates and a combination of various different fruits and nuts. The simple ingredient list made us think that these delicious bars can be easily recreated. Using dates, cashews, almonds, sea salt and dark chocolate, we created these Sweet & Salty Chewy Nut Bars. Eat them after a workout, as a pick me up during the day, or as a dessert.  



Start off by soaking two third cups of raw unsalted cashews in water for one to two hours. Once they finish soaking, strain and blend until smooth. Set aside. 

Place half a cup of raw unsalted almonds into a blender and pulse until finely processed. You want them to be a little crunchy. Set aside. 

Place half a cup of pitted dates into a blender and blend until smooth. 


Next, in a bowl, combine cashews, almonds, dates and a quarter teaspoon of sea salt. Mix well and form into a ball. 


Place ball in between two sheets of parchment paper and roll out with a rolling pin to form a large rectangle, approximately 1/4 inch thick, 4 inches wide and 7.5 inches long. 


Melt one tablespoon of dark chocolate in the microwave and drizzle on top of the slab. 


Refrigerate for one hour in order for the slab to set. Once set, remove from the refrigerator and cut into six bars. Store in the refrigerator. 



Sweet & Salty Chewy Nut Bars
Makes 6 bars

Ingredients:

2/3 cup Raw unsalted cashews
1/2 cup Raw unsalted almonds
1/2 cup Pitted dates
1/4 tsp Sea salt
1 tbsp Dark chocolate chips

Instructions:
  1. Soak cashews for 1-2 hours in water.
  2. Strain cashews and blend until smooth. Set aside. 
  3. Place almonds in a blender and pulse until finely processed. Set aside. 
  4. Place dates in blender and blend until smooth.
  5. In a bowl, combine cashews, almonds, dates and sea salt. Mix well. 
  6. Form mixture into a ball, place between 2 sheets of parchment paper and roll out with a rolling pin to form a large rectangle, approximately 1/4" thick, 4"wide and 7.5"long. 
  7. Melt chocolate in the microwave and drizzle on top of slab. 
  8. Place slab in the refrigerator for an hour to set. Once set, remove from refrigerator, cut into six bars and serve. Store in the refrigerator. 

Makes 6 bars. Each bar is approximately 240 calories.
