Vegan Chocolate Peanut Butter Truffles


Happy Valentine’s Day! Here’s a delicious guilty free treat to try.



Start by processing one quarter cup plus two tablespoons of large flake oats with a blender or food processor until it becomes flour-like in consistency.

Next, separately process or mash a quarter cup of pitted dates until smooth.

Mix together oat flour, dates, one tablespoon of cocoa powder, a quarter cup of natural peanut butter, a quarter cup of puffed millet (or cereal of your choice), a tablespoon of pure maple syrup and a pinch of salt until well mixed.

Roll mixture into 12 truffles and keep refrigerated. 


You can bag them up and give them to friends and family!

Makes 12 truffles

Ingredients:

¼ cup + 2 tbsp Large flake oats
¼ cup Pitted dates
1 tbsp Cocoa powder
¼ cup Natural peanut butter
¼ cup Puffed millet or cereal of your choice
1 tbsp Pure maple syrup
Pinch of sea salt

Instructions:
  1. Process oats in a blender or food processor until flour-like in consistency.
  2. Separately process or mash dates until smooth.
  3. Mix together oat flour, dates, cocoa, peanut butter, puffed millet, maple syrup and a pinch of sea salt until well mixed.
  4.  Roll mixture into 12 truffles and keep refrigerated until time to serve.


Makes 12 truffles. Each truffle is approximately 70 calories.
